We first met Fran of Vito Bio at Tottenham Green Market where were captivated by his display of delicious Italian food. Since then Fran has joined us a trader on occasion at E17 Village Market and now he is bringing his expert pasta making skills and fresh Calabria flavours to Project 660. Here is a little bit from Fran and the menu for this weekend.
My business is inspired by the memories I have of Calabria, my home and my Mather and grandmother food. I use ingredients of the typical cuisine of southern Italy.
"When I think of food inevitably, my thoughts turn to my childhood.
I grew up in a small and peaceful village in the Calabrian countryside, where life flows slowly, and where the most important things are the simplest too.
The alarm was punctuated by the crowing of the cock, it is from there that the day started with the collection of fresh fruits from the trees, vegetables, and even fresh eggs.
Then I sat next to my mother and loved watching those skilled hands preparing simple but delicious and mouth-watering food, the smell wafted to all the rooms of the house and over the walls.
All this brought my family sitting around a big table, after a hard work of a whole day in the field, to enjoy great food completely made from scratch.
It was like a ritual that is repeated every day, a way to bring the family together. Eventually, food in Calabria is equal to LOVE and FAMILY"
Fresh ravioli with goat cheese and pumpkin with courgette bechamel and truffle cheese(veg), or home made basil pesto and Parmesan.
Panini with friarialli (Italian rapini) and fresh spicy sausage, With Nduja sauce.
Burrata salad, with mix leafs salad, vine tomatoes, walnuts. With the add of prosciutto or grilled courgette for vegetarians.
Patate mbacchiuse (Fried potatoes with peppers, onions).
