You might have guessed it from the name, but every month we introduce a new coffee. 

We do this to shine a light on  coffees and celebrate them for a month and tell their story. That means we get to offer you lovely lot a new coffee to get your tastebuds around each month! 

January's coffee is Alpaca Lips. January is often one of those hard winter months, but we wanted to approach this new year, of all years, with positivity, humour and a cracking Peruvian coffee pun. 

About the coffee: 

The coffee is produced by Roger Chilcon Flores in the Cajamarca region in northern Peru. He is the owner of 3 hectares of coffee in the El Diamante village of San Jose de Lourdes district where he grows both Yellow and Red Caturra at very high altitude (above 1900 meters above sea level!).

Some of Roger's family also grow coffee in the area and they manage their farms together. Whilst each family member owns their own land, Roger takes care of the picking, processing and drying of the coffee. Cherries are picked as ripe as possible before being pre-fermented overnight in bags. These macerated cherries are then depulped and fermented for 24 to 36 hours depending on the weather conditions. This extended fermentation and cherry maceration gives the cup a pronounced fruity flavour which complements the crisp acidity found in high altitude coffees. Roger then dries all his coffee inside a ventilated greenhouse on a wooden patio. Once the coffee is dried he then brings the coffee down to the city of Jaén where he delivers it to our importer Falcon's warehouse.
