This is not your typical decaf; it's a true showcase of how process innovation and thoughtful farming can elevate even decaffeinated coffee to specialty standards.
Grown with Care: Sourced from El Vergel, a pioneering estate in Tolima. The coffee starts with meticulously selected Red and Yellow Caturra cherries grown at 1,450 meters above sea level.
Advanced Processing: The cherries undergo a carefully controlled natural anaerobic fermentation lasting 48–60 hours. This is followed by slow drying using a combination of raised beds and low-temperature mechanical drying.
Sugarcane EA Decaf: Once stabilized, the coffee is decaffeinated using the Sugarcane Ethyl Acetate (EA) method. This natural process, derived from locally grown sugarcane, gently removes caffeine while preserving the bean's vibrant aromatic profile and inherent sweetness.
